One-Pan Organic Chicken Thighs with Roasted Root Vegetables
This is the dinner we make when the fridge holds a few carrots, a sweet potato, and an onion that needs using up. Bone-in chicken thighs roast on top of the vegetables, so their juices season everything underneath, and there is only one pan to wash.
Thighs are forgiving: they stay juicy even if you leave them in a few minutes too long, which makes this a good recipe for busy evenings. Swap the vegetables for whatever is in season, such as parsnips in winter, or new potatoes and fennel in spring.

One-Pan Organic Chicken Thighs with Roasted Root Vegetables
Ingredients
Method
- Heat the oven to 425°F (220°C) and set a rack in the middle.
- Pat the chicken thighs dry with paper towels. Dry skin is what turns crisp in the oven.
- On a large rimmed sheet pan, toss the carrots, sweet potato, onion, parsnips and garlic with 2 tablespoons of olive oil and 3/4 teaspoon of salt. Spread them in a single layer.
- Rub the chicken with the remaining oil, then season with the thyme, paprika, remaining salt and the pepper. Nestle the thighs skin-side up on top of the vegetables, leaving a little space between pieces.
- Roast for 35–45 minutes, until the skin is deep golden and an instant-read thermometer in the thickest part of a thigh (not touching bone) reads at least 165°F (74°C). Thighs are most tender at 175–185°F.
- Rest for 5 minutes, then stir the vegetables through the pan juices and serve with lemon wedges.
Notes
- Crowding the pan steams the vegetables instead of roasting them. If your pan is small, use two.
- If the vegetables are browning faster than the chicken, stir them once halfway through.
Meal prep and storage
Refrigerate cooled leftovers in an airtight container for up to 3–4 days. Reheat in a 375°F (190°C) oven for 10–15 minutes to keep the skin crisp; a microwave works but softens the skin.
Substitutions and variations
- Boneless thighs: reduce the roasting time to about 25 minutes.
- Swap thyme for rosemary or za'atar.
- Add a drained can of chickpeas for the last 15 minutes for extra crunch.
FAQ
Can I use chicken breasts?
Yes, but bone-in breasts dry out more easily. Roast them until 165°F (74°C) and check early.
Do I need to peel the carrots?
No. Scrub them well; the skin roasts nicely.
