Blueberry Caprese Salad with Basil and Balsamic

Juicy blueberries join cherry tomatoes, bite-size mozzarella and fresh basil in this summery twist on the classic Italian caprese salad. A splash of olive oil and balsamic vinegar is all it needs. It comes together in fifteen minutes and is excellent as a side, a snack or part of a picnic spread.

Total Time 15 minutes
Servings: 4 servings

Ingredients

  • 1 cup cherry tomatoes halved
  • 1 cup fresh blueberries rinsed and dried
  • 8 oz fresh mozzarella pearls or a ball cut into bite-size pieces
  • 1/4 cup fresh basil leaves torn or thinly sliced
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar or balsamic glaze
  • flaky salt and black pepper to taste

Method

  1. Halve the tomatoes and cut the mozzarella into pieces about the same size as the blueberries.
  2. Put the tomatoes, blueberries and mozzarella in a bowl.
  3. Drizzle with the olive oil and balsamic vinegar and season with salt and pepper.
  4. Toss gently, scatter the basil over the top and serve right away.

Notes

  • Tear or slice the basil just before serving so it does not darken.
  • Dry the berries well after rinsing; water dilutes the dressing.
